MACARONI

CHARACTERISTIC
 One of the smaller tube pastas.
 Macaroni is short and has a narrow tube.
 Sometimes it has a bend in it, known as elbow
macaroni.
 Most famously used in rich and tasty mac and
cheese.
PLATING, INGREDIENTS, AND METHOD
TO PREPARE
BAKED MAC AND CHEESE
INGREDIENTS
 500g macaroni
60g (tbsps.) Western Star Original Butter
¼ cup plain flour
3 cups (750 ml) milk, warmed
2 ½ cups (135g) Perfect Italiano Perfect Bakes cheese
2 tbsps. Oregano leaves, chopped
1 ½ cups panko breadcrumbs
¼ cup (60 ml) olive oil
Salad, to serve (optional)
METHOD TO PREPARE
STEP 1:
Preheat oven to 200°C / 180°C fan- forced. Grease a 2 litre (8 cup capacity)
ovenproof dish.
STEP 2:
Cook pasta in a large saucepan for 12 minutes or until tender. Refresh
under cold water and drain well.
STEP 3:
Meanwhile, melt the butter in saucepan over medium heat, Slowly add the
flour, whisking until combined. Add the milk in batches and continue to stir
until the sauce becomes thick and coats the back of wooden spoon. Stir in 1
¼ cups of Perfect Bakes cheese.
STEP 4:
Add cooked pasta and oregano to the sauce, stir to combine.
Spoon into the prepared dish.
Step 5:
Place panko and remaining 1 cup of Perfect Bakes cheese in a
medium bowl. Pour in the oil and use hands to mix until well
combined. Scatter crumb mix over the pasta and bake for 20
minutes or until golden brown. Serve with a simple salad.

Cannelloni is a cylindrical type of
lasagna, generally served baked with
a filling and covered by a sauce in
Italian cuisine.
A tube shaped is about 7cm long and
2cm wide.

TO PREPARE
CHICKEN AND RICOTTA CANNELLONI
INGREDIENTS
1 tbs olive oil
1 onion finely chopped
2 tsp garlic crushed
400g chicken mince
250g ricotta
½ tsp nutmeg
4 fresh lasagne sheets
700g pasta sauce
1 cup cheese grated
1 pinch salt and pepper to taste
METHOD TO PREPARE
STEP 1:
Preheat the oven to 180°C. Heat oil in a frying pan and cook onion and garlic
until soft. Add chicken mince and cook until it has whitened.
STEP 2:
Remove the mince from the pan and allow to cool. When cooled add ricotta,
nutmeg, salt and pepper to taste. Then, mix well. Cut each lasagne sheet in half
and place chicken down the middle of each sheet.
STEP 3:
Roll up and place join on the bottom. Spread half the tomato sauce in the bottom
of a large baking dish.
STEP 4:
Arrange rolled cannelloni over the sauce. Pour remaining tomato sauce over the
cannelloni and sprinkle with cheese. Bake for 35 minutes.
