F & B Service
Welcoming behavior to wards guests or people you
have just met.
1. French or Silver Service: This is a very personalize service food is bought
from kitchen and placed at side board. It is announced to the guest before
service which is from the left. The beverage served from the right. the food is
served from platter to plate.
2. English service: This service is same as the French service with the
exception that a “Butler” is present the served the dish to the guest. As a
butler is a person who knows all about the likes and dislikes of a person.
3. Russian Service: The food is largely garnished and kept on the side board.
The guest is the asked to get up and have a look at it. Then the food is
served as in the French service.
4. American or Plated Service: American service is a pre-plated service
which means the food is served into the guest’s plate in the kitchen itself and
brought to the guest. The portion is pre-determined by the kitchen and the
accompaniments served with the dish.
5. Cafeteria Service: Here the food is individually priced and bill is pays before
have the food. Here the guest have the food either on table and chair or on
high tables.
6. Indian Service: Here the food is served from in front of the guest, which is
commercially not possible. Indian food is best had with hand, so a finger
bowl is given both before and after the meal.
7. Buffet Service: It is a demonstration service where food is displayed on the
tables. Here large number of people are served in a short time, The guest
pick up a plate from the stacks of plates.
8. Gueridon Service: It is a demonstration service, The food is particularly
cooked in the kitchen and completed in front of the guest. The cooking is
done on a gueridon trolley.
