The products have been developed in cooperation with local factory in Thailand (the largest single tapioca starch plant in Asia), with long production history (established in 1947), producing super high quality tapioca starches (440 000 metric tons of native starch per year). Recipe (Czech standard): 19% Tomato pure (37Brix) 3,2% Modified starch

1. sample: Waxy maize starch (E1422) = Referent sample 2.sample: Culinar Prima 320

Used acidifier: 19% vinegar Production process: all ingredience mixed by hand mixer into smooth homogenous matter. Cook while stirring till 85C, packaging. Used device: Thermomix (Vorwerk) Time: 5 min from begining to attain 85C and let another 5 min, while stirring

Next step of testing: observation of all mentioned samples stored in room temperature and final evaluation after 9 months Results: There is no water releasing and no consistency change in tested samples of Culinar Prima 320 in both tested recipes - it means all samples correspond to referent sample with waxy maize starch content This product is very convenient for use in ketchup application and gives similar product compare with waxy maize starch.
