Chewy Choc Chip Cookies
Makes 6-8
60g unsalted butter, softened
½ cup brown sugar
½ tsp vanilla extract
½ egg, lightly beaten
¾ cup plain flour
1/4 tsp baking powder
50g Chocolate Chips
1. Preheat oven 180˚C
2. Line 1 tray with baking paper. You might need to share a
second one.
3. In a large glass bowl, add butter and brown sugar.
4. With electric beaters, beat for 1-2 minutes until thick and pale.
5. Add vanilla and egg, beating until just combined.
6. In a separate bowl, sift flour and baking powder.
7. With a plastic spatula, add half the flour, gently fold until
combined. Stir in rest of flour.
8. Add choc bits, stir until just combined.
9. Evenly portion tablespoons of mixture and briefly roll into a
ball.
10. Place 6 on each tray, leaving room to spread between each
biscuit.
11. Bake for 10-15 minutes until golden.
12. Allow to cool on trays for 5 minutes.
13. Transfer to a cooling rack to cool properly.
