visually unpleasant to the consumer, and to
provide clean, healthy, and safe working condition.

germs and bacteria and we should also sanitize it.

Teacher: Very Well said. And according to (Mariott


Norman, 2017) that sanitation is a planned way to
have a clean operation following the regulations,
improve the shelf life of food and reducing the
maintenance.

And, there are some importance of sanitation that


we must possess:
1. Prevents pest infestation
2. Kills bacteria already present
3. Reduces potential for cross contamination
4. Helps increase shelf- life
5. Minimizes chance for injury
6. Helps create a more pleasant work environment

3. And to attain those important things in


sanitation, what is needed to sanitize
the food processing plant?
Learner: We must use a sanitizer.

Teacher: Very Good! And what is sanitizer?


Learner: Sanitizer is a type of antimicrobial that
kills or irreversibly inactivates at least 99.9 percent
of all bacteria, fungi, and viruses (called microbials,
microbiological, microorganisms) present on
surfaces, tools, utensils and equipment.

And here are the types of sanitizers:


Types of Sanitizers
1.Quaternary Ammonium Chlorides - often found in
dis- infectants and in cleaning products that are
used in places such as hospitals, day care centers,
restaurants, and homes.
2.Acid-based sanitizers - to clean and sanitize a
variety of surfaces commonly found in dairy,
beverage, food processing and farm applications.
3.Chlorine dioxide- kills bacteria, viruses, and fungi.
Very small amounts are used in public water
treatment facilities.
4.Hypochlorites- killing bacteria, fungi, and viruses,
including influenza virus.
