Panipuri Recipe

Ingredients:

For the Puris:

 1 cup semolina (sooji)


 2 tablespoons all-purpose flour (maida)
 A pinch of baking soda
 Water (as needed)
 Oil (for deep frying)

For the Pani (Flavored Water):

 1/2 cup mint leaves


 1/2 cup coriander leaves
 1-2 green chilies (adjust to taste)
 1-inch piece ginger
 1 teaspoon roasted cumin powder
 1/2 teaspoon black salt
 1/2 teaspoon chaat masala
 1 tablespoon tamarind pulp
 Salt to taste
 Cold water (3-4 cups)
 Ice cubes (optional)

For the Filling:

 1 cup boiled chickpeas or black gram (chana)


 2 medium-sized potatoes, boiled and mashed
 1 teaspoon roasted cumin powder
 1/2 teaspoon chaat masala
 Salt to taste
 1 small onion, finely chopped (optional)
 Fresh coriander leaves, chopped (optional)

Instructions:

Making the Puris:

1. In a mixing bowl, combine semolina, all-purpose flour, and a pinch of baking soda.
2. Add water little by little and knead the mixture into a firm dough. Cover it with a damp
cloth and let it rest for about 30 minutes.
3. After resting, knead the dough again and roll it out into a thin sheet (about 2-3 mm thick).
4. Using a small round cutter (or a bottle cap), cut out small discs from the dough.
5. Heat oil in a deep frying pan over medium heat. Once the oil is hot, fry the discs until
they puff up and turn golden brown. Remove them and place them on paper towels to
drain excess oil. Let them cool and store in an airtight container.

Preparing the Pani:

1. In a blender, combine mint leaves, coriander leaves, green chilies, ginger, roasted cumin
powder, black salt, chaat masala, and tamarind pulp. Add a little water and blend into a
smooth paste.
2. Transfer the paste to a large bowl and add cold water to your desired consistency. Mix
well.
3. Adjust salt and spices as needed. Add ice cubes if you prefer the pani to be extra cold.

Preparing the Filling:

1. In a mixing bowl, combine boiled chickpeas or black gram, mashed potatoes, roasted
cumin powder, chaat masala, and salt. Mix well.
2. Add chopped onions and coriander leaves if using. Mix to combine.

Assembling the Panipuri:

1. Take a puri and gently crack a hole in the center using your thumb.
2. Stuff the puri with a small amount of the filling.
3. Dip the filled puri into the prepared pani, making sure it's filled with the flavored water.
4. Pop the whole puri in your mouth and enjoy immediately!

Repeat the process with the remaining puris and fillings. Panipuri is best enjoyed fresh.
