Tapai making
Aim
To obtain the chemical process and synthesis of
alcohol in production of tapai
ingredients and apparatus
Procedure
1. Steam rice for 25 minutes 2. put the rice in a bowl
3. add boiled water and sugar 4.mix them together
into the rice
5.Put the mixed rice into container 6. Spread yeast on the rice
7.flip another side of the rice and 8. gently press the rice and make a
spread yeast dough
9.Close the container 10.Cover it with a cloth and wait
for 3 to 4 days for fermentation
Safety precautions:
be careful while pouring boiled
water
make sure the container is clean and
airtight
clean hand before start making

Discussion
Chemical process to form tapai is ethanol fermentation. Ehanol
will be produced through ethanol fermentation. For making tapai
,yeast is added to sugar and place in warm area with the absence
of air. With the absence of air , fermentation will be carry out and
consider as anaerobic process.Yeast will secrete ezymes to break
down sugar and starches into gluocose.The znyme will also
decomposes gluocose to form ethanol and carbon dioxide.

Ways to improve quality of tapai
store tapai in a warm area
keep tapai in a clean and airtight container
wrap tapai with banana leaves as it help to
speed up fermentation
ferment tapai for a longer time to make it
softer

I would like to recommend tapai to students in schools as
it brings a lot of benefits to us.Tapai contains high fiber
which can help students to avoid from constipation and is
good for digestion . Nowadays , students require more
energy to participate co curricular activities in
school.Tapai contains high carbohydrates and is the best
source of energy for student to produce energy for their
body.Last but no least, tapai benefit student by reducing
bad cholesterol and increasing good cholesterol in the
blood.
