temperature. Ovens in South Africa work on Celsius.

Basic Ingredients to keep in your cupboard / fridge / freezer

If you try to build up to having most of the basics in your kitchen, then
it is always easy to make something to eat. A good idea is a shopping
list on your fridge and then just write down something as soon as it’s
finished to remind you to buy again. This works out cheaper in the
long run too, as when you want to make a meal, you will only need to
buy one or two things for it.
Cupboard

Frittata
Like an omelette, but better

Ingredients

Onions
Eggs
Milk
Cheese
Meat / Veg
Salt & Pepper
Mixed Herbs

Method:

-Using a non-stick pan, fry chopped onions until soft. Add whatever leftover meat
and veg you have in your fridge. A basic Frittata can just have onions, bacon,
and tomatoes. Chopped leftover Braai meat is also nice to add. Mince works
welland chicken is also great. You could even add leftover potatoes or pasta to a
Frittata.
-Season the fried mix with salt, pepper and mixed herbs
-Beat eggs in a bowl. A basic guide is 2 eggs per person. Add a little milk
-Pour the eggs into the pan over the fried goods. Turn the heat down to low and
cover the pan with a lid.
-Leave to cook for about 10 minutes, or until the egg have set.
-Sprinkle some grated cheese on top and Voila!

Pancakes

Ingredients

Flour 250ml
Eggs 350ml
Oil 100ml
Sugar 100ml
Eggs 2
Salt 1/4 tsp

Method:
-Mix flour, sugar and salt in a bowl.Beat eggs, oil and water together.
-Mix eggs into dry ingredients with a whisk until smooth.
-Pour thin layer of batter into oiled non-stick pan.
-(The first one is always a flop! Murphy’s Law).

Crumpets / Flapjacks

Ingredients

Flour 250ml

Milk 150ml

Baking powder 10ml

Sugar 40ml

Egg 1

Pinch of salt

Method:

-Mix flour, sugar and salt in a bowl. Beat eggs and milk together.
-Mix eggs into dry ingredients with a whisk until smooth.
-This batter is much thicker than pancake batter.

Hashbrowns

Ingredients

Egg , beaten 1

Cheese, grated 1/2 cup

Flour 2 tbsp

Salt 1/2 tsp

Method:

-Peel and then grate the potatoes. Squeeze as much liquid out of the potatoes as
possible.
-Add the egg, flour and salt to the potatoes and mix well. Then add the cheese.
-Heat a non-stick frying pan with a little oil. Drop spoonfuls into the oil and flatten
gently. Fry until golden on one side, then flip over and fry other side.
-Drain on paper towel.
-Yummy on their own, but also nice as part of a meal.

Lunch / Light Meals


Chicken Noodle Soup

Ingredients
Whole corn kernels, drained 1 Can

or
Frozen corn 1 Cup

Water 2 Cups

Chicken stock cube 1

Soy sauce 1tsp

2 minute noodles chicken flavor 1 pkt

Method:
-Bring water and stock cube to a boil on the stove. Add the chicken breast and
poach until cooked. Remove the chicken from the stock, then slice or shred.
-Add noodles, spice packet, corn and soy sauce to the stock, Then add the chicken
back. Stir until all warmed through and noodles are cooked.
-Season to taste.
** For an Asian twist, beat an egg in a bowl and then pour a thin stream
of beaten egg into the soup while stirring the whole time.

Nachos - Easy to make and everybody loves them

Ingredients

Nacho Chips / Plain Doritos 1 Pkt

Tomato & onion mix 1 Can

Cheese, grated
Soy / Worcestershire sauce
Sal & Pepper
Pinch of sugar

-Add the tomato & onion mix and beans to a pot / pan. Cook on
medium heat to boil down the liquid.
-Season with a dash of sugar, salt & pepper, Worcestershire sauce
etc. A bit of peri-peri sauce is also yummy.
-When the mix has reduced down a bit, pour over nachos, which are
lying in a plate.
-Sprinkle cheese over the top and grill till the cheese has melted.
*** Best served with a bowl of sour cream and a bowl of guacamole
(mashed avocado).

Stuffed Spuds

Ingredients
Potatoes 2

Oil
Salt
Cheese
Filling ingredients

Method:
-Boil 2 Potatoes, or pierce and cook in Micro until soft but not breaking apart. You
can also bake them in the oven for 30 minutes. Just rub with oil and salt.
Medium heat.
-When spuds are cooked, slice in half. Hollow out the centre of the potato, leaving
just the shell, and half a centimeter of flesh.
-Mix the scooped out potato into your other filling ingredients
-Add fillings back into shells. Sprinkle grated cheese over and melt in Microwave or
under a grill.

Fillings:
Fried bacon & onion - fried onion & tuna - leftover mince / chicken
- baked beans - mushroom & peppers
The filling options are endless - be creative

Broccoli Salad:

Ingredients
Broccoli Head 1

Cheese
Bacon

Mayonnaise
Salt

Method:
-Fry the Bacon in some oil and mixed herbs in a pan.
-Wash the raw broccoli. Cut the raw broccoli into small pieces and place in a bowl.
-Cut cubes of cheese and add into the bowl. Add the bacon once cooled. Mix in the
mayo. Season with salt and pepper according to your liking.
*** Can add apple or nuts too.

Peri-
Peri-Peri Chicken Livers -Serve with bread or savory biscuits. Or on toast for
a quick meal. Cooked livers can easily be frozen

Ingredients
Chicken Livers 500g

Mild Chakalaka 1 Can

Peri-peri sauce
Tomato Sauce

Onion , choppe 1

Salt & Pepper

Method:
-Fry up onion in a little oil, in a pot. While onions are frying chop
livers into smaller pieces. It will break down while cooking too. Cut
off any excess sinew.
-Add livers to cooked onions and fry on medium to high heat to brown
livers. Once livers are all browned, add chakalaka mix and season
to taste.
-Turn heat down and simmer gently for about half an hour, stirring
occasionally. If preferred, only half a tin of chakalaka can be
added, and then also tinned tomatoes. Half a can of beer or a
glass of wine in the sauce also adds nice flavor. If you do not drink
it all.

Quesadilla:

Ingredients
Wrap 1

Cheese 1 Cup

Garlic & mixed herbs

Salt & Pepper

Method:
-Preheat the oven to 180˚C.
-Cut the wrap in half. Sprinkle the cheese on one half. Season to taste.
-Cover with the second half of the wrap. Bake in the oven for 10 minutes or until
crispy.
-Serve with mayo / guacamole on the side.
***You can add any of the following fillings: options are endless. Fillings like meat
and vegetables must be cooked beforehand.

Fillings:
Bacon bits - chopped ham - shredded chicken - pesto & feta Mince
- thinly sliced beef - shredded pork - chili - tomato
