BUTTER COOKIES

Before you eat them...
Butter cookies, also known as Butter biscuits or
Danish biscuits, are cookies originally made in
Denmark. The base ingredients are butter, flour
and sugar, but you can add more if you want.
Butter cookies are categorized as “crisp
cookies” thanks to their texture, caused by the
quantity of butter and sugar they have. (Millan,
2023) Fun Fact!

Butter cookies are an old Danish tradition.


Did you know that the cookies we have
nowadays were made around 1100?. Years
later, around the 1800s, Danish homes got
equipment to prepare them and make their
own cookies in an easier way. (Smith, 2022)
INGREDIENTS
Ingredients

2 tsp of vanilla 1/3 of sanding 2 cups of flour


2 egg yolks
extract (5ml) sugar (240 g)

1/2 cup of 1 cup of unsalted 1/2 tsp of salt


suggar (100g) butter (227g) (3g)
STEPS
STEP 1
1. In a stand mixer fitted with a
paddle attachment, cream the
butter, salt, and sugar together
until light and fluffy.
STEP 2
2. Add the egg yolks while
mixing. Scrape down sides of the
bowl. Add 2 tsp vanilla extract.
STEP 3
1. Pour in the flour mixture
and mix until incorporated.
STEP 4
4. Roll the dough into a log.
Wrap in parchment paper or
plastic, then chill it in the
refrigerator for at least an
hour.
STEP 5
5. Once the dough is chilled
sprinkle sanding sugar on a
clean surface. Unwrap the
dough and roll in the sugar.
STEP 6
6. Use a sharp knife to cut
dough into slices of even
thickness.

Place cookies on a
parchment-lined baking
sheet and bake at 350F for
10-12 minutes or until the
edge is JUST turning golden
brown.
TIPS
Measure your flour correctly. A good way
and the most convenient is using a scale.

Sanding sugar gives a nice crunch to the


edge but it's totally optional.

For a crisper cookie leave the baking sheet


in the oven, turned off and the door cracked
slightly open after baking.

Use a good vanilla for this recipe. It's one


of the stand out flavors here so you don't
want to use the artificial stuff.
