For the product of students collaborative ideas and skills, Each group is expected to
prepare a pie for the required menu items.
MENU PLAN PREPARATION
Before proceeding on the actual performance activity and task. Each group are
expected to prepare this activity Menu Plan.

KITCHEN LABORATORY PROCEDURES
In this part of laboratory, the following activities will be strictly observe by the teacher.
A. Setting baking laboratory convenience
B. Perform Mise-en place
C. Reviewing of Standard Recipe
D. Explanation of Performance Criteria
E. Setting of Timer ( 2 hrs. in doing preparatory activities including baking , and 20
minutes for plating )
F. Supervision of the laboratory teacher.
PERFORMANCE NSTRUCTION-
In this part the teacher will facilitates the performance activity by giving instructions
and explaining the mechanics and rules of the performance.
GROUP PERFORMANCE ACTIVITY: Portion Control in Pie Making
In this part, each group will be working on the task by accomplishing the given
template provided by the teacher.

20 Properly and accurately prepared stock following the techniques
of the preparation and PPE was observed in all students.
15 Properly prepared stock with moderate errors in following the
techniques of the preparation and PPE was observed in few
students.
10 Simply prepared stock with more errors in following the
techniques of the preparation and PPE was observed in some
students.
5 Poorly prepared stock and did not follow the techniques of the
preparation and PPE was not observed in all students.
