Storing Bread and Baked Foods April2020

This document provides information on safely storing various breads and baked goods. It states that bread and baked products can be stored on the counter or in the pantry for 2-3 weeks, or indefinitely in the freezer, though quality may suffer after 2-3 months. It recommends using air-tight containers to prevent staleness, and notes that cream-filled pastries and custard pies need refrigeration due to their higher moisture content. The document also indicates that homemade baked goods have a shorter shelf life than store-bought due to a lack of preservatives, and that unbaked dough can be refrigerated for 3-4 days or frozen for 1 month.

Storing Bread and Baked Products

Bread and baked products such as muffins, bagels, quick breads, waffles, pastries, cakes and
cookies are safely stored on the counter or in the pantry. Storing in the refrigerator can increase
shelf-life by 2-3 weeks by reducing spoilage issues such as mold growth. All of these baked goods
can be safely frozen indefinitely, but will start to suffer quality issues such as changes to flavor and
texture if held frozen for longer than 2-3 months (cookies 6-12 months).
