OPERATIONS PLAN
NUTRITION AND FOOD SERVICES
PURPOSE AND POLICY
• TO DEFINE NUTRITION AND FOOD SERVICES RESPONSE TO EMERGENCIES
• IN THE EVENT OF A DISASTER, NFS EMPLOYEES ARE RESPONSIBLE TO IMPLEMENT THE
EMERGENCY OPERATIONS PLAN
• IN AN EMERGENCY, IT MAY NOT BE POSSIBLE TO SERVE THE FULL MENU, OR TO MEET ALL
MODIFIED DIET REQUIREMENTS
• FOOD SERVICE WILL BE PROVIDED TO MEET THE MINIMUM NUTRITIONAL STANDARDS SO HEALTH AND
WELLBEING OF PATIENTS WILL NOT BE JEOPARDIZED
• THE PURPOSE OF NFS IS TO FEED THE PATIENTS, BUT IT MAY BECOME NECESSARY TO PROVIDE
FOOD TO STAFF AND VISITORS IF THE CANTEEN SERVICE IS NOT OPERATIONAL
GENERAL PROCEDURES
• MASS COMMUNICATION SYSTEM WILL BE USED TO COMMUNICATE EMERGENCY TO ENTIRE
HOSPITAL
• ASSEMBLY POINT IS MAIN KITCHEN BB 110 UNLESS OTHERWISE NOTIFIED
• ALL NUTRITION AND FOOD SERVICES STAFF WILL REPORT TO COOK SUPERVISOR ON DUTY
• IF EMPLOYEE IS OFF DUTY, THE SERVICE CHIEF WILL INITIATE NUTRITION AND FOOD
SERVICES CASCADE CALL LIST TO INFORM ALL EMPLOYEES OF THE EMERGENCY AND
INSTRUCTION OF WHERE TO REPORT
No electricity
UTILITY FAILURES - No water
No access to NFS kitchen
• REGULAR MEAL SERVICE COULD BE DISCONTINUED
• IT MAY BE NECESSARY TO SERVE ONLY TWO MEALS PER DAY
• NUTRIENT MODIFIED DIETS WILL CONTINUE TO THE EXTENT POSSIBLE, BUT THEY MAY BE SERVED
REGULAR FOOD ITEMS
• CONSISTENCY MODIFIED DIETS MAY RECEIVE FOOD ITEMS THAT ARE NOT AT DESIRED CONSISTENCY,
BUT WILL ALLOW CONSUMPTION BY THE PATIENT
• SUPPLEMENTAL FEEDINGS WILL BE DISCONTINUED
• ALL GS EMPLOYEES INCLUDING RDNS AND DIET TECHS WILL BE UTILIZED WHERE NEEDED TO
ENSURE PATIENTS ARE FED
• FREEZER TRUCKS MAY BE NEEDED IF REFRIGERATORS / FREEZERS ARE INOPERABLE
ELECTRICITY FAILURE
• BACK-UP GENERATOR WILL AUTOMATICALLY ACTIVATE TO AVOID DISRUPTION IN POWER
SOURCE FOR THE KITCHEN
• 10 SECOND DELAY BEFORE IT KICKS IN
• STAND STILL. DO NOT WANDER AROUND THE KITCHEN WHEN THE POWER IS OUT
• NO LIGHTS IN THE BREAKROOM, ONLY THE KITCHEN
ELECTRICITY FAILURE
• IF THE BACK-UP GENERATOR FAILS, THERE WILL BE NO ELECTRICITY IN THE KITCHEN
• ALL WALK-IN REFRIGERATOR AND FREEZERS WILL BE LOCKED WITH RESTRICTED ACCESS
• A FREEZER TRUCK MAY BE OBTAINED IF POWER WILL BE OFF FOR MORE THAN 24 HOURS
• ALL CHILLED FOOD ITEMS LOCATED IN THE REACH-IN REFRIGERATORS WILL BE UTILIZED AT THE
NEXT MEAL SERVICE
• STEAM-JACKETED KETTLES DO NOT REQUIRE ELECTRICITY AND WILL BE AVAILABLE FOR COOKING
• SUPERVISOR WILL PROVIDE HEADLIGHTS
• USE CELL PHONE FLASHLIGHT – ONLY APPROPRIATE TIME TO USE YOUR PHONE AT WORK!
• FOOD MAY BE ASSEMBLED IN BULK AND TAKEN TO PATIENT CARE AREAS FOR DELIVERY TO
PATIENTS
• NO TRAYS, CHINA OR OTHER REUSABLE ITEMS SHOULD BE USED
NO WATER
• IF WELL WATER SUPPLY IS OUT, THE BACK-UP WATER IS CITY WATER
• IF BACK-UP WATER IS NOT AVAILABLE:
• FOOD WILL BE PREPARED WITHOUT THE USE OF ADDITIONAL WATER
• ALL MEALS WILL BE ASSEMBLED AND DELIVERED FOLLOWING STANDARD PROCEDURES USING
DISPOSABLE DINNERWARE
• EMPLOYEES WILL USE DISPOSABLE GLOVES FOR FOOD PREPARATION AND SERVICE
• HANDS WILL BE CLEANED USING ALCOHOL WIPES
• MENU MODIFICATIONS:
• COFFEE/TEA WILL NOT BE SERVED
• JUICE/FRUIT DRINK AND/OR MILK WILL BE SERVED
• FROZEN VEGETABLES AND STARCHES MAY BE COOKED IN THE COMBO OVEN WITHOUT ADDING WATER
• FRESH FRUITS AND VEGETABLES MAY NOT BE USED IF THEY REQUIRE WATER FOR CLEANING
• CANNED FRUITS AND VEGETABLES ARE APPROPRIATE TO USE
NO ACCESS TO NFS
KITCHEN FACILITIES
• OBTAIN A FREEZER TRUCK FROM THE PRIME VENDOR OR THE COMMUNITY
• UTILIZE CANTEEN SPACE AS AVAILABLE TO PROVIDE LIMITED PATIENT MEAL SERVICE
• OBTAIN EMERGENCY MOBILE KITCHEN FACILITIES
• SERVE ON DISPOSABLE DINNERWARE
FIRE RESPONSE – RACE
• RESCUE ANYONE IN IMMEDIATE DANGER
• ALARM BY ACTIVATING PULL STATION AND NOTIFY COWORKERS “CODE RED”
• CALL 2222
• CONFINE FIRE BY CLOSING ALL DOORS
• EVACUATE HORIZONTALLY PAST THE FIRE OR SMOKE DOORS
• IF THE FIRE IS OUTSIDE THE KITCHEN AND IN A PATIENT CARE AREA, FOLLOW INSTRUCTIONS
FROM THE NURSING STAFF MEMBER IN CHARGE
• FIRST REMOVE CART FROM AREA AND REPORT BACK TO NURSING STAFF FOR ASSISTANCE
• IF THE FIRE IS IN THE KITCHEN AREA, EVACUATE THE KITCHEN AND ASSEMBLE IN DESIGNATED
SMOKE AREA OFF THE NFS DOCK
• REPORT TO YOUR COOK SUPERVISOR ON DUTY
EVACUATION
• ONLY THREE PEOPLE CAN ISSUE AN EVACUATION ORDER:
• THE CHIEF EXECUTIVE OFFICE
• THE CHIEF NURSING SERVICE
• ALBUQUERQUE CITY FIRE DEPARTMENT INCIDENT COMMANDER ON THE SCENE
• ELEVATORS WILL NOT BE IN USE FOR EVACUATING AND ALL EMPLOYEES MUST USE THE
STAIRS
• ALL NFS EMPLOYEES WILL ASSEMBLE AT DESIGNATED SMOKING AREA OFF LOADING DOCK
• IF EVACUATION DOES NOT APPLY TO ENTIRE HOSPITAL, CONTINUE TO SERVE OTHER AREAS IF
THE ELEVATORS ARE OPERABLE
• NO ELEVATOR = NO FOOD SERVICE
HAZARDOUS MATERIALS
• HAZARDOUS MATERIAL INCLUDES:
• BLOOD
• BODILY FLUIDS
• CLEANING CHEMICALS
• MERCURY
• CHEMOTHERAPY DRUGS
• MEDICAL CENTER EMPLOYEES ARE THE ONLY EMPLOYEES WHO SHOULD CLEAN UP THE
SPILL
• YOUR ONLY JOB IS TO REPORT IT
• USE APPROPRIATE PPE WHEN USING CHEMICALS
• GLOVES, GOGGLES, FACE SHIELD, ETC.
BOMB THREAT
• EMPLOYEES WHO GET A BOMB THREAT SHOULD GET AS MUCH INFORMATION AS POSSIBLE
TO REPORT IT
• NFS EMPLOYEES WHO NOTICE ANY SUSPICIOUS PACKAGES OR OBJECTS SHOULD NEVER
TOUCH THE ITEM
• CALL 2222 IMMEDIATELY TO REPORT THREATS OR SUSPICIOUS OBJECTS AND INFORM
IMMEDIATE SUPERVISOR
SHELTER-IN PLACE
• NFS STAFF WILL SECURE THEIR BUILDING AND LOCK THEMSELVES IN THEIR OFFICES OR
STOREROOMS UNTIL THE ALL CLEAR IS ANNOUNCED
• GOAL IS TO GET BEHIND A LOCKED DOOR AND STAY SAFE
• IF PERSONNEL ARE IN ANOTHER BUILDING, THEY WILL ASSIST IN LOCKING AND SECURING THE
BUILDING THEY ARE IN
• IF PERSONNEL ARE OUTSIDE, THEY ARE TO SEEK SHELTER IN THE NEAREST BUILDING POSSIBLE
• IF THEY CANNOT TAKE SHELTER IN A BUILDING, THEY ARE TO MOVE FAR AWAY FROM INCIDENT AND
SEEK SHELTER
• CALL SUPERVISOR TO INFORM OF LOCATION AND CONDITION
