MARKET AND DEMAND ANALYSIS

1. Situational Analysis

Tapioca Pearls are a key ingredient of Bubble tea, a popular drink all around the world.
Tapioca Pearls are sphere that are made using tapioca starch. Tapioca is majorly
manufactured in few Asian countries and in Brazil.

The demand in India for Tapioca Pearls has only started increasing with bubble tea, and other
bubble desserts being sold in more and more outlets. The demand for these products is
increasing due to anti-inflammatory and anti-carcinogenic properties. Correspondingly, the
demand for Tapioca Pearls is also increasing as tapioca is the most popular topping in Bubble
Tea and Bubble Desserts. The Bubble Tea market is expected to reach $4.3 billion in 2027,
with a CAGR of 7.8% from 2020 to 2027 [ CITATION Vai19 \l 16393 ].

Due to import of Tapioca Pearls, it makes the Bubble Tea and Desserts more expensive.
Currently, the price of 1 kg of Imported Tapioca Pearls is Rs. 800. Therefore, it is lucrative to
manufacture Tapioca Pearls in the country as it will make the pearls more affordable.

2. Market Research

It can be seen that there is no producer of Tapioca Pearls in India. Tapioca Pearls are
currently only imported and supplied by Indian Distributors.

TECHNICAL ANALYSIS

1. Material Inputs
a. Tapioca Starch: a powder made from Cassava Plant root.
b. Brown Sugar Syrup
c. Water
d. Potassium Sorbate: soluble salt
e. Guar Gum: thickener and stabilizer. India is one of the biggest producers of
Guar Seeds.

2. Manufacturing Process
a. Step 1: Mixing

Tapioca Starch is combined with Brown sugar syrup, water, potassium sorbate and
guar gum in an industrial mixer, resulting in a caramel-coloured powder.

b. Step 2: Beading

The base powder from step 1 is transferred to a machine where workers lightly mist it
with water. The powder is continuously spun while water is misted allowing it to start
forming beads. The quantity of water has to be perfect as more water will cause more
clumping, and less water will mean no formation of beads.

c. Step 3: Tumbling

The resultant from Step 2 is transferred to another machine where it is spun faster
with more water and base powder being added.

d. Step 4: Sorting
When the pearls are big, they are transferred onto a conveyer belt where they are
filtered according to the required size. The bigger pearls are broken down while the smaller
pearls are returned to the tumbler to grow more.

e. Step 5: Two-step heating

The final pearls are roasted in a rotary dryer at around 200-300oC and then cooled and
then go through a secondary drying at 50-60oC before being packed.
