Hazard Identification Decision Tree

This 3 question hazard identification process is used to determine if a pathogenic microorganism presents a risk and should be added to a final list for risk profiling. It first establishes if the pathogen is present in raw materials and if the production process can eliminate it. If not eliminated, it determines if the pathogen can contaminate the final product and if it has caused issues with similar products in the past. The pathogen is added to the final risk list if it is toxigenic or can grow in the product.
