    INTRODUCTION

    Welcome to my new cookbook 60 days of Pancake recipes.

    The story behind this book is short and sweet.

    Someone close to me bet me that I could not make them a different pancake for each day of the month.

    My response was that not only could I do it for a month but I could do it for an entire season. Thus began the great pancake challenge. A glorious parade of pancakes that ended on day sixty.

    Why day sixty?

    Well, I was willing and able to cook them for the full three months but I was assured that if I continued even one more day then my morning pancake routine would become a spiritual experience. In other words I would be making pancakes as a ghost.

    This taught me again that age old rule about too much of a good thing. There are people who love pancakes but once you break the two month mark you are going to create burnout or if not someone who needs a pancake intervention.

    So here we go. Sixty days of pancake recipes from basic to advanced. There will be pictures with some of the recipes but not all sixty. If I did that it would really raise the cost of the paperback to print and I wish to keep this book as affordable as possible.

    Final note, if you are looking for nutritional tables or calorie counts you will not find them in this book. If these things really matter to you then why are you eating pancakes? Seriously, they are usually covered with syrup and bacon has been known to hang out with them.

    CHAPTER ONE  THE BASIC PANCAKE

    INGREDIENTS: 

    1 ½  cup flour

    1 teaspoon baking soda

    1/2 teaspoon salt

    2  tablespoons white sugar

    3 teaspoon baking powder

    1/3 cup vegetable oil or 3 tablespoons butter

    1 large eggs or 2 small eggs

    1 ¼  cup milk

    DIRECTIONS:

    Now you will mix together flour, baking soda, salt, sugar and baking powder. Now add in oil, eggs and milk; beat well. If using butter, melt it before adding in.

    Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the frying pan, using about 1/4 cup for each pancake. Brown on both sides and serve hot with toppings of your choosing.

    CHAPTER TWO SUPER FAST PANCAKES

    INGREDIENTS:

    2 cups milk

    3/4 cup white sugar

    2 eggs

    1 teaspoon vegetable oil

    1 teaspoon vanilla extract

    2 cups all-purpose flour

    1 1/2 tablespoons baking powder

    ––––––––

    DIRECTIONS:

    Place milk, sugar, eggs, oil and vanilla in the mixer. Add flour and baking powder. Blend until smooth.

    Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter
