Eggs in Purgatory

  • Time: ~1 hour
  • Serves: 3

Ingredients:

  • 2 tbs oil
  • 1 medium onion
  • 1 lbs. green beans (frozen or fresh – cut in halves)
  • 8 oz sausage (sliced)
  • 3 or 4 cloves garlic
  • 3 tbs sour cream
  • 1 tbs paprika
  • 1 tsp vinegar (or to taste)
  • ¼ tsp marjoram
  • ¼ tsp oregano
  • water

Steps

  1. Heat oil on medium.
  2. Dice onions and mince garlic. Add to pot. Cook until onions until caramelized.
  3. Lower heat or remove pot from heat. Add paprika and stir well.
  4. Add sausage and return pot to medium heat. Allow sausage to brown.
  5. Add beans, marjoram, and oregano. Continue to stir and sauté at medium heat for 5 minutes.
  6. Add water to almost cover beans and sausage.
  7. Cook 45 minutes or until beans are almost tender.
  8. Add vinegar. Cook for five more minutes.
  9. Add sour cream. Bring to a simmer then remove from heat.
  10. Serve over rice. Add extra sour cream as desired.
