Babpörkölt
served over rice
Ingredients:
- 2 tbs oil
- 1 medium onion
- 1 lbs. green beans (frozen or fresh – cut in halves)
- 8 oz sausage (sliced)
- 3 or 4 cloves garlic
- 3 tbs sour cream
- 1 tbs paprika
- 1 tsp vinegar (or to taste)
- ¼ tsp marjoram
- ¼ tsp oregano
- water
Steps
- Heat oil on medium.
- Dice onions and mince garlic. Add to pot. Cook until onions until caramelized.
- Lower heat or remove pot from heat. Add paprika and stir well.
- Add sausage and return pot to medium heat. Allow sausage to brown.
- Add beans, marjoram, and oregano. Continue to stir and sauté at medium heat for 5 minutes.
- Add water to almost cover beans and sausage.
- Cook 45 minutes or until beans are almost tender.
- Add vinegar. Cook for five more minutes.
- Add sour cream. Bring to a simmer then remove from heat.
- Serve over rice. Add extra sour cream as desired.
