Claims (8)
- 알룰로스 함유 당류를 포함하는, 하기의 박테리아, 곰팡이 및 효모로 이루어진 군으로부터 선택된 1 이상의 미생물의 생육 억제제:
(i) 박테리아로서, 락토바실러스 카제이(Lactobacillus casei), 및 락토코커스 락티스 아종 락티스(Lactococcus lactis subsp. lactis);
(ii) 곰팡이로서, 아스퍼질러스 오리제(Aspergillus oryzae), 아스퍼질러스 아와모리(Aspergillus awamori), 모나스커스 퍼퓨리우스(Monascus purpureus), 모나스커스 루버(Monascus ruber) 및 리조퍼스 오리제(Rhizopus oryzae);
(iii) 효모로서, 사카로마이세스 세레비지애(Saccharomyces cerevisiae), 사카로마이세스 파스토리아누스(Saccharomyces pastorianus).
- 제1항에 있어서, 상기 알룰로스는 건조 고형분 기준 상기 당류 100 중량부에 대하여 50 내지 100 중량부로 함유되는, 생육 억제제.
- 제1항에 있어서, 상기 당류는 설탕, 포도당 또는 이의 조합을 포함하지 않는, 생육 억제제.
- 제1항 내지 3항 중 어느 한 항의 생육 억제제를 포함하는 발효주.
- 제4항에 있어서, 상기 발효주는 막걸리 또는 와인인, 발효주.
- 제4항에 있어서, 상기 발효주는 하기 박테리아, 곰팡이 및 효모로 이루어진 군으로부터 선택된 1종 이상의 미생물에 의하여 발효된, 발효주:
(i) 박테리아로서, 락토바실러스 카제이, 및 락토코커스 락티스 아종 락티스;
(ii) 곰팡이로서, 아스퍼질러스 오리제, 아스퍼질러스 아와모리, 모나스커스 퍼퓨리우스, 모나스커스 루버, 및 리조퍼스 오리제;
(iii) 효모로서, 사카로마이세스 세레비지애, 및 사카로마이세스 파스토리아누스.
- 제4항에 있어서, 상기 발효주는 하기의 박테리아, 곰팡이 및 효모로 이루어진 군으로부터 선택된 1종 이상의 미생물을 포함하는, 발효주:
(i) 박테리아로서, 락토바실러스 카제이, 및 락토코커스 락티스 아종 락티스;
(ii) 곰팡이로서, 아스퍼질러스 오리제, 아스퍼질러스 아와모리, 모나스커스 퍼퓨리우스, 모나스커스 루버, 및 리조퍼스 오리제;
(iii) 효모로서, 사카로마이세스 세레비지애, 및 사카로마이세스 파스토리아누스.
- 발효주에 제1항 내지 3항 중 어느 한 항의 생육 억제제를 첨가하는 단계를 포함하는 발효주의 후발효 억제 방법.
