As part ofa multi-purpose study, the monetary value of edible plate waste was estimated in 18 lar... more As part ofa multi-purpose study, the monetary value of edible plate waste was estimated in 18 large capacity Ministry of Health (MOH) general hospitals in Saudi Arabia. Direct measurement of the plate waste was carried out over 2-days, in which 6 consecutive regular diets were served to 554 Saudi patients (male 268 and female 286) and their 205 attendants (male 12 and female 193). It was estimated that the average plate waste represented approximately 40% of the meal cost/ participant/day, and the estimated annual monetary loss for the 5.625 million regular meals to be served to patients and attendants will be around 35 million Saudi Riyals.

THREE HUNDRED and eleven (311) Saudi visitors (teenagers and adults) participated in a nutritiona... more THREE HUNDRED and eleven (311) Saudi visitors (teenagers and adults) participated in a nutritional awareness and anthropometric study in a Health Week Exhibition campaign sponsored by the Ministry of Health in 1408 H (1988). The study revealed that the average adult male and female heights were 167cm and 155cm against the American standard heights of 178cm and 163cm respectively. Adult females weighed more than males (43.2% vs 19.8%), and the married subjects of both sexes were heavier than the unmarried subjects (male: 15.4% vs 4.4%; female: 35.1% vs 8.1%). A good number of subjects consumed a variety of foods from the four food groups daily which reflected a good trend in food and nutrition awareness. However, the study emphasizes the importance of nutrition education and propagation for the improvement of general health and nutritional status of the population.

In the subject of caffeine teratogenic effects on the health of women at childbearing age, important factors such as the women's knowledge, attitude and practices which may influence the level of caffeine consumption need to be investigated. This study involved 112 Saudi non-pregnant young women with main age of 26±1.85 years whom were reported as heavy coffee and soda drinkers. All study participants consume more than 100mg/day of caffeine with a mean range of 258±156 - 305±204 mg/day. Soft drinks provide the highest amount of caffeine, 401±113 - 540±60 mg, for around 56-81% of the studied group. The caffeine consumption data were gathered and calculated using the 24-hour recalls and the beverage-frequency methods. Rats were fed ad libitum. Deficiencies of selenium were induced by feeding rats the respective diets for 4 weeks. The level of selenium supplementation was 0.25 mg/kg diet as sodium selenite. Cholesterol was added to the diets at the level of 1.5%. The study shows that selenium deficiency was associated with increased plasma cholesterol, very low density lipoprotein cholesterol (VLDL-Cho), low density lipoprotein cholesterol (LDL-Cho) and atherogenic index (AI) compared with the control and selenium supplementation groups (which were not significantly different). Lipid peroxidation products were significantly increased in the urine of rats fed the selenium-deficient diet compared with those fed on selenium supplementation. Therefore, Se reduces lipid peroxidation and thus has a positive effect on plasma lipid concentration.

Starch in corn meal was first hydrolyzed by amylases of B. stearothermophilus, E. fibuligera or A. oryzae followed by the growth of C. utilis. The combination of E. fibuligera and C. utilis produced a significant (P<0.05) increase in lysine, methionine, tryptophan. The relative nutritive value (%), which reflected the amino acid balance, increased significantly (P<0.05) with this sequence of microorganisms. Niacin, riboflavin, and thiamin increased significantly (P<0.05) when mixed cultures of A. oryzae and E. fibuligera in combination with C. utilis were employed. When E. fibuligera alone was grown, no significant change was observed in thiamin content but significant increases occurred in niacin and riboflavin.
