MUTUALIZED PROMOTIONS

The Power of LTOs LTOs (Limited Time Offers) bring excitement to your café and make it easy to spice up a menu with variety and on-trend tastes. These innovative menu offerings generate guest interest and frequency, resulting in higher sales, profitability and check average. In simplest terms, they’re a big deal. Our guests are at the heart of every LTO offering, which is why we’re always reviewing trends and consumer insights. Everything in the promotions series is guest-centric and every decision is based on a guest’s motivations and key drivers. Culinary development always starts with data: research from Datassential® and other sources, research from our vendor partners and our own sales reports. With this information, we can identify movements, trends and ingredients to develop LTOs that entice and attract guests—and keep them coming back again and again.

6

Gathering and Measuring Guest Data During the LTO development process, we rely on information from varied sources.

DATASSENTIAL We use Datassential menu trends and menu adoption cycles to begin development. The menu adoption cycles show us ingredient trends from inception to ubiquity which allow us to understand fastest growing menu ingredients.

CONSUMER VILLAGE

INFOR Our enterprise POS system gives us the power to capture and analyze millions of guest data points and to help guide strategic discussions with clients. We use real-time, real guest, transaction data to understand your guests as individuals, and create products and solutions that they want to experience.

Together, these unique tools and processes enable us to better understand the guest as an individual and capitalize on our insight to create solutions.

WINTER / SPRING 2024

This community is made up of thousands of consumers who shop at cafés like ours. We talk with them about everything food-related, including foods they’d like to experience, feedback on our products and recipes, and much more. Their direct input is shared and incorporated into every aspect of the development and execution of promotions.

Sodexo’s cold beverage planograms are based on both guest sales data and marketplace data. They are designed to increase sales and revenue at your unit. Planograms ensure the most popular—and profitable—products receive prime slots in coolers and merchandisers, guaranteeing that guests find their favorite products and see the new products they’d like to try. Note what’s new on the planograms and fill the slots with new products. Be sure to sell out discontinued products before adding new items.

Update Your Cold Beverage Pricing Major cold beverage vendors are increasing prices at the start of 2024, so be sure to set product pricing at optimized levels: For Healthcare units, use the pricing tool on Retail Ranger. For Campus locations, use the Campus pricing app. If needed, move existing prices closer to an optimized price with incremental increases.

WINT_24_C2_01

Quality ingredients, memorable flavors and a passion for delighting guests inspired February’s Love of Food LTOs— both variations of Mexican classics. Mindful’s menu allows guests to indulge healthfully on today’s most on-trend dishes: a Green Goddess Grain Bowl and a Vietnamese Hot Honey Grilled Chicken Bowl. You’ll find countertop displays for every February LTO and Hero, as well as bio sheets for the Love of Food chefs, in your promotion kit and in the digital assets tab on Retail Ranger (us-retailranger.sodexo.com).

Chef Shares Winning Recipe with Love of Food Chef Sam Blackburn won the 2023 Culinary Innovation Challenge with his plant-forward dish Tres Hermanas Tostada, now one of Love of Food’s LTOs in February. This winning recipe features sustainably sourced ingredients with a low environmental impact. Sam describes his dish as a casual, fun version of a tostada that celebrates the Northern New Mexico region he calls home—it’s a crispy tortilla heaped with smashed bean stew, charred corn, squash, mushrooms and habanero-pickled vegetables, and topped with cotija cheese. Chef Sam, a Senior Manager on the Operational Excellence team, has won other contests in recent years, including the 2018 National Mushroom Council Recipe Contest, the 2020 California Giant Berry Farms Chef Invitational and Sodexo’s 2021 Culinary Innovation Challenge, and he’s currently a finalist in Sodexo’s 2023 Sustainable Chef Challenge. He was recently invited to serve as a Mindful Development Chef and has been busy sharing his skills with the Mindful culinary team, crafting dishes and Heroes that guests will love.

Set Up for Success with Menu Planning

With a delicious variety of plant-forward menu options, your guests are choosing plants (vegetables, grains and beans) over animal products for both health and environmental reasons. As Earth Day 2024 is celebrated, insights* show that 70 percent of US citizens are eating plant-based foods, up from 66 percent one year ago. Your guests care about health, locally sourced food and sustainability, and Mindful and Love of Food have been ahead of the curve for more than a decade in offering plant-based, vegetarian and vegan dishes. April’s LTO line-up includes 20 plant-forward dishes, allowing guests to find exactly what they’re looking for in your café.

Contact your segment culinary director for assistance with menu planning.

Handhelds are having a moment! As café guests multitask through their day, they appreciate Mindful’s array of handhelds that are both delicious and nutritious (and best of all—no utensils needed!). With on-trend proteins, fresh veggies and flavorful spreads and sauces, these Hero handhelds are hands-up awesome because they’re portable and perfect for enjoying one bite at a time.

The preferred weekday breakfast for 44 percent of consumers is a breakfast sandwich (Nestle Professional, 2022).

Feature Plants at the Center of the Plate

• When menu planning, start with segment-approved menus preloaded into your menu-planning applications. • Replace or add menu items to customize for your region and guest preferences. • Forecast to achieve margin and food cost targets. • Flow final menus to Printables and the Everyday app to promote your café offerings.

Top Tips for Cold Beverage Growth Let’s work together to grow sales and margins while providing the right products in the right place at the right price to our clients and guests. Take these five actions to grow your unit. 1. Post your cold beverage QR code in your cooler and activate that planogram. Coach your team to check on deliveries and proper product placement. 2. Activate Cold Beverage Innovation products. Our guests expect to see new items in coolers. Innovation increases basket size and propensity to purchase. 3. Offer 1-liter ambient water. Having ambient water displayed near our registers increases water sales by 12 percent.

In retail settings, a positive guest experience generates sales and repeat business. For Simply to Go coolers, planograms offer prime shelf space to popular and profitable products to maximize sales and revenue, based on insights and sales data—and allow guests to find exactly what they need at a glance. Planograms drive sales by making sure the right products are in the right places, especially for coolers with a variety of menu items and beverages. You’ll find up-to-the-minute planograms for your cooler on Retail Ranger at usretailranger.sodexo.com.

Recipes and Build Cards Are Important Too!

Made with protein-rich ground chickpeas and seasonings, falafel’s popularity is on the rise due to its appearance on fast-casual menus.

The Story of Unreal Deli With a 100-year family history of owning New York delicatessens, great-granddaughter (and vegan) Jenny hustled to develop and perfect a mouthwatering 100 percent plant-based corn’d beef to satisfy her cravings. What started in her tiny home kitchen and landed Mrs. Goldfarb on Shark Tank (with Mark Cuban investing $250,000 in 2019) is now the #1 bestselling vegan deli meat on Amazon and was voted #1 plant-based meat by Thrillist. Today, Unreal Deli offers plant-based deli meat—Unreal Corn’d Beef, Unreal Roasted Turk’y and Unreal Steak Slices—made with premium ingredients in every slice.
