Natural deep eutectic solvents (NaDES) have been considered an environmentally friendly and cheap alternative to conventional organic solvents. In this work, a green extraction methodology was developed using ultrasound-assisted extraction (UAE) and NaDES for the extraction of antioxidant non-extractable polyphenols (NEPs) from mangosteen peel. To select the best NaDES to extract NEPs from mangosteen peel, seven NaDES were studied. Antioxidant capacity and total phenolic and proanthocyanidin contents were determined for the extracts. The molecular weights for the NEPs present in those extracts were evaluated by size exclusion chromatography. Experimental results showed that choline chloride–lactic acid (1:2) was the NaDES allowing the highest antioxidant proanthocyanidin content in the extracts. En una sociedad de consumo como la actual, a veces se difunden noticias sobre alertas alimentaria... more En una sociedad de consumo como la actual, a veces se difunden noticias sobre alertas alimentarias de diversos origenes, o se siembran dudas sobre las sustancias anadidas a algunos alimentos. Un contexto que fomenta la preocupacion por la calidad y la seguridad de lo que comemos. En este espacio vamos a conocer un programa cientifico que desarrolla estrategias para controlar y mejorar la calidad y la seguridad de los alimentos que consumimos. Ademas, facilita la elaboracion de alimentos que puedan tener un efecto beneficioso para nuestra salud. Se trata del programa AVANSECAL, una iniciativa financiada por la Comunidad de Madrid en la que participan cinco grupos de investigacion y dos laboratorios de la REdLab de la Comunidad. Los cinco grupos de investigacion pertenecen a la Universidad de Alcala -que coordina el programa-, la Universidad Complutense, la UNED y el CSIC. Los dos laboratorios pertenecen a su vez a la Universidad de Alcala y a la Universidad Rey Juan Carlos.
The control of the quality of foods is currently of great concern for researchers, consumers, and... more The control of the quality of foods is currently of great concern for researchers, consumers, and industries and, as a consequence, important efforts are being devoted to provide relevant information about food processing, contamination or adulterations and to assess that legal regulations are fulfilled. Betaines are important nutrients that can be used to evaluate the quality of foods since they are present in a broad variety of foods and foodstuffs and have shown to have beneficial effects on health. Based on these facts, the determination of betaines is an important task when evaluating the quality of foods. This chapter is focused on the use of capillary electrophoresis coupled to mass spectrometry for the determination of betaines and its application to the analysis of vegetable oils.

The processing of fruits, such as cherries, is characterized by generating a lot of waste materia... more The processing of fruits, such as cherries, is characterized by generating a lot of waste material such as fruit stones, skins, etc. To contribute to environmental sustainability, it is necessary to recover these residues. Cherry stones contain seeds with a significant amount of proteins that are underused and undervalued. The aim of this work was to extract cherry seed proteins, to evaluate the presence of bioactive peptides, and to identify them by mass spectrometry. The digestion of cherry seed proteins was optimized, and three different enzymes were employed: Alcalase, Thermolysin, and Flavourzyme. Peptide extracts obtained by the digestion of the cherry seed protein isolate with Alcalase and Thermolysin yielded the highest antioxidant and antihypertensive capacities. Ultrafiltration of hydrolysates allowed obtaining fractions with high antioxidant and antihypertensive capabilities.
