Before:

class MyCountryType extends CountryType
{

}

After:

class MyCountryType extends AbstractType
{
    public function getParent()
    {
        return CountryType::class;
    }

    public function configureOptions(OptionsResolver $resolver)
    {
        $resolver->setDefault('choice_loader', ...); // override the option instead
    }
}
