The McpJsonUtilities.DefaultOptions should not be read only

While I understand there is a need to enforce a default set of behaviors making no way to modify the JsonSerializerOptions makes it impossible to customize the response properly.
I request some way of changing the options used to serialize the JSON back to the client.
