Upgrades the Lance dependency from v3.1.0-beta.2 to v3.0.0-rc.2, and DataFusion from 51.0 to 52.1.0 to match what Lance uses.
All Rust tests pass (444/444). Python and Node test failures observed locally are pre-existing flakes unrelated to this change.
