The problem
Neither in the helper settings nor there in the statistics options the source entity and the state characteristic for the sensor are shown. So they can't be looked after or changed.
In home-assistant/frontend this was mentioned as a core issue ( #21675).
However, it was closed there without any follow-up.
If this is really a core issue, I hope it can be fixed via this route.
