I started watching Jamie Oliver’s 5 Ingredients: Quick and Easy Food show on television and am really enjoying it. So much so that I bought the cookbook near the end of the month! I’m not necessarily in a hurry when I’m cooking these days but it’s nice to have so many fast and easy recipes at hand. Also, many of these recipes are for 2 people which makes it easy for me to not have too many leftovers or have to do conversions while I cook.
- Chicken piccata, mashed potatoes, leftover roast delicata squash. One of my favorite ways to cook chicken for myself.
- Southwestern corn and cheese chowder from Cold Weather Cooking. This was quite good with sweet potato, corn, onion, green chiles and a combination of broth, beer and milk.
- Baked ziti and radicchio and golden raisin salad, both from Lidia’s Italy in America.
- Spaghetti and meatballs, skillet cauliflower, again both from Lidia’s Italy in America.
- Stromboli from Sheet Pan Suppers, radicchio and golden raisin salad with blue cheese.
- Leftover baked ziti and radicchio salad.
- Leftover spaghetti and meatballs, salad.
- Gallurese bread and cabbage soup, fennel and orange salad. The first from Lidia Cooks from the Heart of Italy and the second from Lidia’s Italy.

- Sausage and beans on polenta, from Lidia’s Italy. This was fantastic even though I used canned beans.

- Homemade pizzas, mulberry coffee cake (homegrown mulberries from my freezer stash)
- Our early Valentine’s dinner – Steak, leek and prosciutto gratin, Hasselback potatoes, creamed spinach
- I took the last of the leftover beans and sauce (Sausage was all gone) and served it over ziti, Caesar salad, garlic bread
- Chalupas (aka tostados) with beans, cheese, avocado, lettuce, salsa
- Chopped egg and avocado sandwich from Mexican Today
- Chicken piccata, mashed potatoes, cooked carrots
- Chicken enchiladas verde, red rice
- Chicken enchiladas verde, red rice, pinto beans from the freezer, salad with an avocado dressing from Mexican Everyday.

- Takeout pizza
- Salmon with mustard sauce, mashed olive oil potatoes with escarole (both from Lidia Bastianich).
- Chalupa / tostado with rajas and avocado
- Orechiette with bacon and artichokes Really good! I made it with canned artichokes. (Not marinated just packed in water.)
- Eggplant Parmesan, roast cauliflower
