Crude Trametes versicolor exopolysaccharides (cEPS) were used for antioxidative activity testing.... more Crude Trametes versicolor exopolysaccharides (cEPS) were used for antioxidative activity testing. Obtained results revealed high ability of cEPS for DPPH free radical scavenging and high chelating ability at the highest tested concentration (20 mg/mL), while the reducing power was significantly lower. However, based on the EC50 values, antioxidative activities of the cEPS decreased in the following order: reducing power > DPPH scavenging ability > chelating ability. Due to the high carbohydrate and β-glucan content it is assumed that they are the main carriers of cEPS antioxidative activities. D-glucose was the main monosaccharide (87.18 ± 0.27%) while the dominant amino acids were L-lysine (L-glutamic and L-aspartic acid), which are amino acids with taste similar to the monosodium glutamate. In addition, content of sweet tasting amino acids compared with the group of bitter tasting amino acid was 2.1 times higher, indicating favorable composition of cEPS protein fraction for food industry applying.

The birch polypore Piptoporus betulinus was among two mushrooms that were found in the Iceman&... more The birch polypore Piptoporus betulinus was among two mushrooms that were found in the Iceman's bag. Recent studies indicated that P. betulinus was probably used as a religious and medicinal item. In order to examine the medicinal potential of P. betulinus, hot water (HW), partially purified (PP), and alkali extract (HA) were prepared and tested for antioxidant, antimicrobial, cytotoxic, and angiotensin I-converting enzyme (ACE) inhibitory activity. All tested samples exhibited moderate cytotoxic activity, and HW appeared as the most effective (IC50 = 0.8 ± 0.1 mg/ml for HeLa cells). HA proved to be a good 1,1-diphenyl-2-picrylhydrazyl radical scavenger and exhibited the strongest ferric-reducing power (EC50 = 0.07 ± 0.3 mg/ml). The same extract (HA) also expressed the strongest ferric-reducing power (EC50 = 0.99 ± 0.1 mg/ml). Hot alkali extraction contributed significantly to ACE inhibitory activity (EC50 = 0.06 ± 0.00 mg/ml) and to antimicrobial activity, especially against highly resistant Enterococcus faecalis (minimum inhibitory concentration: 0.156 ± 0.000 mg/ml; and minimum bactericidal concentration: 1.25 ± 0.00 mg/ml).
The important aspects of microbial control of the hygiene are monitoring process of areas that co... more The important aspects of microbial control of the hygiene are monitoring process of areas that come into close contact with food and other surfaces in food plants. In the standard method of taking swabs from equipment, there is no immediate corrective action. The results are obtained after 24-48 hours and if the sanitation is not adequately performed, it could lead to contamination of products. Therefore, the application of bioluminescence to determine ATP, as central metabolites of microorganisms and also indicator of organic impurities, present unavoidable rapid method for the level of hygiene. This paper describes the comparison of these methods with standard microbiological method in one of the leading dairy in Serbia. The eff ect of sanitation were performed on the pasteurization line, the number of fi llers and on microfi ltration line by using luminometer LIGHTNING MVP (Biocontrol, USA) which detects contamination by measuring the amount of ATP. To compare eff ectiveness we also used swabs taken from these places after the sanitation and determined the total microbial count and total coli form bacteria. The tests were performed at over 100 locations in order to get a more relevant picture of the eff ectiveness of sanitation measures.

Abstract Medicinal fungi, especially Ganoderma lucidum, are a notable raw material for alcohol be... more Abstract Medicinal fungi, especially Ganoderma lucidum, are a notable raw material for alcohol beverage production. The fungus G. lucidum is appreciated due to a specific bitter taste, which comes from bioactive compounds, mainly triterpenoids. The phenolic compounds and triterpene are the most valuable G. lucidum bioactive compounds, which are soluble in strong alcoholic beverages. Thus, the main attention will be dedicated to their chemical characteristics and bioactivity. The main goal of this chapter is to summarize the data about production processes, physicochemical characteristics, bioactivity, and sensory characteristics of alcohol beverages produced with G. lucidum and also in combination with other plants. Scientific data show that this fungus improves the functional properties of alcohol beverages, such as antioxidant and antiaging. Even more, G. lucidum changes the color of alcoholic beverages and accelerates a long period of maturation in wooden casks.
